I am Not a Vegan

…but I am *really* enchanted by its philosophies and culture and choices and most importantly, food!

While I’ll never discount my love for the McDonald’s chicken snack wrap or a medium rare Gibson’s steak I am always on a mission to find foods that make me feel good, look good and RUN FAST.

A huge oxymoron to all this plant stuff, my pre-flight meal before Boston Marathon 2011:

mcd

After mastering the smoothie thing and exploring a largely plant-based diet for the last several weeks, I wanted to take on a true vegan cooking adventure so I thought I would tackle making vegan cheeze sauce. My first attempt was a huge epic failure. I bought the wrong kind of nutritional yeast:

and the cheeze sauce looked like this:

#fail.

People seem to love vegan cheeze sauce. And by people I mean like everyone on all the blogs and Twitter accounts I follow. So I didn’t give up and took to attempt #2, this time with the correct kind of nutritional yeast which is found in the bulk section at Whole Foods (thank you sister for this shopping tip).

Bad iPhone photo. Yes, it looks like fish food:

I chose the following recipe simply because I had every ingredient necessary to make it already in my pantry or fridge. Plus the sauce is raw (no cooking necessary) and I could make it in the beloved Vitamix. This time, a huge, major success!

Smokey Pumpkin Mac & Cheeze

The finished sauce! (—> I am an amateur and forgot to take a picture of the ingredients pre-blend).

Used Brown Rice noodles (when made again, I will probably use penne or some other smaller shape instead) from Trader Joes:

Added some steamed broccoli:

Voila!

Here’s another link to the recipe.
