You want this recipe.

I’ll tell you what.  There is nothing I hate more than bananas.  The smell, the sight, the taste.  Mostly I hate how they make my body feel - like my insides are fighting in a war where everyone dies and no one wins.

BUT there’s a loop-hole.  I LOVE banana chips (no nutritional value whatsoever) and I especially love banana bread (namely my mom’s recipe).  For some reason, my stomach can handle bananas in these forms and, horror of horrors… I like them!

Always on a mission for better health and fun recipes, I came across a version of Paleo Banana Bread while clicking around on one of my various social media blogging sites.  **I’m not a Paleo die-hard but I appreciate its message.  

After combining three different recipes, here’s what I came up with.  The cool thing about these is that instead of flour, the recipe calls for Almond Meal.  Almond Meal is basically just ground up almonds.  That’s it.  Trader Joe’s carries it… of course.  


WttMB Paleo Banana Nut Muffins

2 c Almond Flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1-2 tbsp honey
1/2 tsp vanilla
2 tbsp greek yogurt or apple sauce
1/4 tsp salt
2 overly ripe mashed bananas
3 eggs
1 c chopped walnuts, reserve 1/4 c for topping

Preheat oven to 350.  Combine above ingredients and portion into a 12-muffin tin or 9x9 square baking dish.  Sprinkle remaining chopped walnuts atop muffins.  Bake for 20-22 min. 



Excuse me while I drool over these with some coffee and almond butter.  Dying to know the nutritional facts but not a clue in the world how to come up with the numbers.  Enjoy!
